Apple and Pear Clafoutis


  • A carton of unsweetened apple juice
  • 2 pears, peeled, cored and cubed
  • 2 small cooking apples, cored and cubed
  • 4 large eggs
  • 100g ZyloSweet
  • Pinch of salt 
  • 200g plain flour
  • 200ml milk
  • 60g Omega Excellence Organic Coconut Butter, melted
  • 1tsp vanilla extract


  1. Preheat oven to 180°C (Gas Mark 4) and butter a 9” pie dish
  2. Combine the apple juice, apples and pears in bowl and leave to stand while you prepare the other ingredients.
  3. In a food processor, combine the eggs, sugar, flour and salt. Add the milk, coconut butter, vanilla and 50ml of the apple juice the fruit was soaking in. Mix until smooth.
  4. Arrange the apples and pears in the pie dish and cover with the batter.
  5. Bake the clafoutis until centre is set and top is golden. This can vary between about 55 minutes and 1 hour 15.
  6. Leave to cool, then cut into wedges; serve warm.
