Asparagus with Pear and Walnut Dressing


  • 200g asparagus tips
  • 1 tbsp walnuts
  • 1 small pear, peeled and cored
  • 70ml Omega Excellence Cold Pressed Walnut Oil
  • 6 thinly sliced radishes (or halved cherry tomatoes)


  1. Lightly toast the walnuts and finely chop.
  2. Blend the walnut oil with the flesh of the pear.
  3. Stir the toasted walnuts into this mixture.
  4. Add the asparagus to boiling water for two minutes.
  5. Remove from the pan and mix in the radishes or tomatoes.
  6. Top with the walnut and pear mixture and serve warm.
