Chicken, basil and walnut butter linguine



  • 2 tbsp Omega Excellence Organic Raw Walnut Butter
  • 2 tbsp Omega Excellence Cold Pressed Walnut Oil
  • Large bunch fresh basil leaves, roughly chopped
  • 1 clove garlic, finely chopped
  • Grated zest of 1 lemon
  • 3/4 teaspoon salt
  • 400g linguine
  • 1 tablespoon Omega Excellence Coconut Butter
  • 4 large chicken breasts, cut into small pieces
  • Sea salt and black pepper 


  1. Blend half of the basil, two thirds of the garlic, lemon zest and salt. Stir this mixture into the walnut butter.
  2. Add the linguine to a pan of boiling water and simmer for 11 minutes.
  3. While the linguine is cooking, heat the coconut butter with the remaining garlic, salt and pepper in a wok. Stir-fry the chicken pieces until cooked through.
  4. Remove the chicken from the heat and stir through the walnut butter sauce. If you prefer a thinner sauce, stir through a little more walnut oil before combining with the chicken.
  5. Stir in the remaining basil leaves.
  6. Add to the linguine and serve immediately.
