Recipes - Leek and Potato Soup

Leek and Potato Soup


  • 2tbsp Omega Excellence Coconut Butter
  • 2 medium leeks, chopped into 2cm wide pieces
  • 8oz peeled and chopped potatoes
  • 1 pint vegetable stock
  • 1 clove of garlic, finely chopped
  • 1 bay leaf
  • Sea salt and black pepper
  • 1⁄2 pint milk
  • Handful fresh parsley, chopped 


  1. Melt the coconut butter then add the leek and potatoes and cook until soft (approximately 5 minutes).
  2. Add the stock, garlic, bay leaf, salt and pepper. Cover and simmer for 30 minutes.
  3. Leave to cool slightly and remove the bay leaf.
  4. Blend for 30 seconds on maximum power.
  5. Return to the pan, add the milk and reheat.
  6. Pour into bowls and sprinkle with chopped parsley.
