Recipes - Walnut, Spinach and Feta Muffins

  • 25g Omega Excellence Organic Coconut Butter, plus extra for greasing
  • 200ml skimmed milk
  • 100g spinach
  • 250g plain wholemeal flour
  • 1tbsp baking powder
  • 1tsp bicarbonate of soda
  • Good pinch of cayenne pepper
  • 50g fresh parmesan (or vegetarian alternative), finely grated
  • 1 egg, lightly beaten
  • 200g feta
  • 100g chopped walnuts


  1. Preheat the oven to 190°C and grease a muffin tin with some coconut butter.
  2. Place the milk and coconut butter in a large pan over a high heat. When the coconut butter has melted, stir in the spinach and bring to the boil.
  3. Remove from the heat and blend until the spinach is finely chopped. Allow to cool for 5 minutes.
  4. Sift the flour, baking powder and bicarbonate of soda into a large bowl.
  5. Add the cayenne and some freshly ground black pepper. Stir in the parmesan and walnuts.
  6. Stir in the egg and the spinach mixture and spoon into the muffin tin. The holes should be about half full.
  7. Add a little crumbled feta to each muffin and top up with the remaining mixture, followed by a little more cheese, pushing the cheese down into the mixture.
  8. Bake for 20-25 minutes, until risen and firm to the touch. Leave to cool, then turn out onto a wire rack. Serve hot or cold.
