Recipes - Wine-poached pears

  • 8 peeled pears
  • 1 bottle of red wine. Elderberry wine can be used as a substitute, for added anti-viral effect
  • 1 cup of ZyloSweet
  • 1tbsp of lemon juice
  • 1tsp vanilla extract
  • 2 cinnamon sticks


  1. Combine all ingredients, except the pears, and bring to the boil.
  2. Reduce the heat and allow the mixture to simmer, then add the pears.
  3. Simmer for 10-12 minutes. If any of the pears are exposed, turn them at this point and simmer for another 8-10 minutes, until they are soft.
  4. Remove pears and leave to cool.
  5. Boil wine sauce until the liquid has been reduced by half.
  6. Pour sauce over pears and serve with either low fat mascarpone or crème fraîche
